12.a. Are Word and Excel ASCII files? Why or why not?

No --- They are not ASCII files. Both Word and Excel (as well as most other applications packages) use their own coding schemes because they require more than 8-bits to store all of their codes (you will notice that ASCII does NOT have a code for such common attributes as underlining, italics, paragraph wrapping, relative references, etc).
